DOLCETTO GRAPPA 50 Cl. e 42 Gradi ( % Vol. ) Delicate grappa obtained from Dolcetto dregs of pressed grapes, coming from the three prestigious D.O.C zones : Dolcetto d'Alba, Dolcetto di Diano d’Alba and Dolcetto di Dogliani. Dregs of pressed grapes in the same day arriving in distillery are distilled in such a way as to pick the greatest quality of aromas and scents. Follow, then, the improving in inox vats.

COLOUR : Clear, crystalline.

SCENT : Intense, with great fineness and with the typical fragrance of grapes.

TASTE : Round, very soft, with great elegance and harmony. Enough mellow final.

MOSCATO GRAPPA 50 Cl. e 42 Gradi ( % Vol. ) Grappa obtained from dregs of pressed grapes ( grape remain ) of tipical and famous Moscato grapes located in the two historical zones ( the zones of Alba and Asti ). Dregs of pressed grapes are destemmed and started to the distillery in such a way as to proceed to the accelerated fermentation, then distillated for extract the harvest scents and aromas in the best way. Follow, then, a quick improving ( some months ) in Barriques.

Grappa's Characteristics

COLOUR : Clear straw-coloured.

SCENTS : Involving, intense and tipical.

TASTE : Soft, deep, with rich fruity aromas. Delicatly sweet and persiten final.

BARBERA GRAPPA, “TUTTOGRADO” ( CAMPIONE DI BARILE) 50 Cl. e 54,5 Gradi ( % Vol. ) Grappa obtained from Barbera vineyards located in the two prestigious D.O.C zones : Barbera d'Alba and Barbera d'Asti. During the distillation we proceed to discard the not high quality part of alcohol ( head and tail ) so to obtain the core of the distillate with all the tipical scents of Barbera grapes. After grappa age for a very long period ( nearly 4 or 5 Years ) in medium size casks made by "American Quercus Alba" oak . After the aging, every single cask Grappa is put in the bottles.

Grappa's Characteristics

COLOUR : Amber-coloured.

SCENT : Intense with soft wood.

TASTE : Full, velvety, with a stong body and great harmony.

Distilleria Sibona

The Antica Distilleria Domenico Sibona S.p.A. is situated in the Roero zone, in the communal discrit of Piobesi d'Alba, a few kilometres from Alba. It was founded about a hundred years ago on the former premises of an old klin. The distillery is located in the centre of an important wine zone, where the most typical vines from Peidmont are cultivated: Nebbiolo vine from which Barolo, Barbaresco and Roero wines are created according to their own zones of production, besides Barbera, Dolcetto, Moscato, Chardonnay, Arneis and Bracchetto vines. Sibona is one of the historical distilleries in the Piedmont region and can boast the oldest distillation license, the N°1, issued by UTF (the official institution that regulates all the operations having to do with distilleries). This is a synonym for a great past and prestige.


From its origins, Sibona distillery has handcrafted its "grappas" from single vine varietes. The distillation process consists of vapour production from fresh marc soon after it arrives in the distillery. Originally, distillation eas carried out by means of an old locomotive, qhich, in time, gave way to copper alembics.

Marc is distilled no sooner it arrives in the distillery, which allows the extraction of the grapes' full aroma. Recently, the distillation of Muscat, Hamburg Muscat and pink Muscat grapes, immediately after fermentation, has given origin to a spirtit called "Distillato Uva" (nemed vedilanga by license). This distillate has been acclaimed by connoisseur for its excellent quality and organoleptic characteristics.

Besides the selection of the best marc of the zone, Sibona's grappas reach high quality levels thanks to accurate distillation, constant updating and improvement of the equipment, the experience of two oenologits who have been working in distillation for years, the elimination of the first and last portions of the distillated , and last, but not least, a long ageing period in barrels, which renders the grappas not only soft and pleasant but also more complex and aromatised.

Grappa

Grappa is a distillate made from marc, i.e. the pomace leftover from grape crushing and the extraction of juice for the purpose of making wine. Distillation takes place in a stoker fired boiler with steam coming from the bottom, which cures the marc. The rest of the procedure is as with other distillates.
