Champagne Nicolas Feuillatte, founded in 1976, released this unusual champagne as an auspicious wine to toast the start of the 21st Century. It is fermented in 225 liter barrels, hence the name Cuvée 225. The creation of wine maker Jean Pierre Vincent, it is a blend of 50% Pinot Noir and 50% Chardonnay grapes. The barrel fermentation brings out the quintessence of the terroir and one may enjoy its fresh, crisp yet complex fruity taste.

Blend: 50% Pinot Noire 50% Chardonnay

Appearence: golden yellow

Nose: generous, with abundant hints of honey, spices, yellow fleshy fruit and vanilla. The woody notes remain subtle and never domante.

Plate: based on a balance between freshness and amplitude and unctuousness. A striking ans well structured winey finaly.

Cellar Master's commnts: the fabulously rich and extraordinarily concentrated cuvée is ideal with dishes that require perfection.

Food pairing: assortment of sashimis ( sea bream, octopus, bluefin tuna), marinated salmon, Pama ham risotto

The cuvées of Champagne Nicolas Feuillatte are blended from wines grown in more than 500 hectares of exclusively Grand Cru and Premier Cru vineyards located throughout Champagne.

Each vineyard and each varietal Chardonnay, Pinot Noir, and Pinot Meunier is vinified separately to allow absolute precision in the final blends of each Champagne. There is a minimum aging of 3 years. Respecting grape varieties, the Cuvée Spéciale Brut Vintage 1999 emphasises the delicacy of the Chardonnay which accounts for 60% of the blend. The right proportion of Pinot Noir and Pinot Meunier give it balance and homogeneity.
