By using the same expertise which dates back to 1850, the fifth generation of the Gancia Family has today created Modonovo Metodo Gancia Asti Docg with the Gancia Method, a new unique and special method of making Asti, by combining the best selection of grapes with yeasts specially cultivated by expert winemakers as per an original House of Gancia method.

Technique:
- Harvest - First half of September, selection and hand harvesting in small baskets of the best grapes
- Pressing - Very soft, only the very best part is used for the Asti
- Careful maturation of a small part of these grapes in small barriques made of Allier and Troncais oak with hyper-oxygenising to better enhance the flavour of the wine
- Long second fermentation of the rest of the moscato at a controlled temperature of up to 9°C with specially cultivated yeast - "cerevisiae"
- Blending of the two parts of wine and second fermentation in new modern tanks at constantly controlled temperatures which never exceed 20°C.
Varietal: White Moscato
Colour: Straw yellow with hints of gold and a sparkling clearness
Perlage: Very fine, rich and persistent with a good crown
Bouquet: Blend of vanilla and fruit with a well balanced constant evolution
Taste: Delicate, long and moderately sweet, aromatic, fruity and full on the palate, winey and pleasant.
Serving suggestions: Ideal for serving with cheese, cooked meats and crustacean dishes and perfect with the most refined desserts. It is excellent also as an aperitif. The wine should be served at a temperature of between 8-10°C.
