Grappa
Grappa
Grappa is a distillate made from marc, i.e. the pomace leftover from grape crushing and the extraction of juice for the purpose of making wine. Distillation takes place in a stoker fired boiler with steam coming from the bottom, which cures the marc. The rest of the procedure is as with other distillates. Grappa originated in Italy and gained its name from the town of Grappa (as with Cognac). Dregs of pressed grapes are destemmed and started to the distillery in such a way as to proceed to the accelerated fermentation, then distillated for extract the harvest scents and aromas in the best way. Follow, then, a quick improving ( some months ) in Barriques.
