The Dievolino “Rosato” is composed of the “salasso” or seigné of 100% Sangiovese grape harvested by hand (beginning of October).
Colour: cherry-coloured, rosè with ruby highlights
Bouquet: very fruity with cherry aroma and raspberry
Taste: vinous, high acidity and minerals
Serving suggestion: fish, vegetables, pasta, salami, ham and appetizers. Good as aperitif
Serving Temperature: 10 – 12°C
"Dievolino, Rosato di Sangiovese. The rosé Dievolino is parented by Dievole's golden Broccato. It is Broccato's salasso, or seigné: Broccato's texture gains force by bleeding off his Rosato. Most of the Sangioveses chosen are of the "Saragiolo" and the "Ciliegiolo" clone - as Dievole's former sharecroppers still care to call them."
