"That certain moment of uncertainty. When ripeness is not all and phenolic maturity must be waited for. It implies the willingness to risk failure - knowing that the greatest risk might be not to leave the grapes on the vine. Even more than this it implies absolute commitment in the vineyard. Site and weather must be in favour as well. The "poggetti" only - Dievole's most ventilated summits - save for last the grapes that are strongest-skinned, in wholesome airy clusters. They dry and concentrate on the vine. Hazard and opportunity. In the best of luck fermentation is very slow. The extraction, promoted by its own "mosto-fiore concentrato" commands about forty days. Novecento is a Riserva Chianti Classico. Novecento's first vintage is the 1990 - "novecento" years after 1090, Dievole's birthyear."
