'Addumari' is Sicilian for "to illuminate", expressing the sunny nature of Sicily. Capocroce Addumari is made from Cabernet Sauvignon and Syrah grapes. Clear yet impenetrably purplish-red in colour, intense and fine bouquet with pervasively complex perfumes ranging from the flowery notes of pansies to the fruity notes of cherries, blackberries and blueberries. Dry, abundant, concentrated and rich taste with tight, mature and pleasant tannins.

The term Addumari derives from the Sicilian dialect and means "to illuminate", "to light up", expressing the sunny nature of Sicily. This wine is made from Cabernet Sauvignon and Syrah grapes grown in the area of Contrada Castellazzo - Trapani.
Colour: Wine with a clear yet impenetrable purplish red colour.
Bouquet: is intense and fine with pervasively complex perfumes ranging from the flowery notes of pansies to the fruity notes of cherries, blackberries and blueberries.
Taste: The wine has a dry, abundant, concentrated and rich taste with tight, mature and pleasant tannins. Smooth and warm. Lingeringly persistent with an impressive aftertaste, it is sustained by a pleasant underlying acidity.
Serving suggestions: Definitely with red meats, accompanied by an aromatic "démie-glace" of dark berries and the sweetness of puréed Tropea onions, or with wild-boar parcels wrapped in strips of bacon fat and cheese with grilled polenta squares and red onion jam.
Vinification: The grapes are brought into the cellar and are destemmed and crushed before being cooled to a temperature of 18/20°C. Temperature-controlled fermentation takes place in stainless steel tanks at 28°C with regular plunging of the cap. After soft-pressing the dregs, the wine is left to rest in stainless steel tanks and then transferred into Allier and Tronçais barriques to age.
Ageing: The wine spends over 12 months in small French barrels of different ages made with medium-toasted staves from the Massif Central (Allier, Tronçais).
Coupage & maturing: Coupage takes place for more than 4 months before bottling, maturing in the bottle more tha 3 months.
CAPOCROCE
After a long spell Gancia has now again returned to Sicily, where it once owned an estate for the production of quality wines and where, coincidentally, the well known Church of Saint Mary of the Angels, historically famous for being involved in the Siege of Sicily during the Unification of Italy Campaign is also known as the "Chiesa della Gancia".
The strong and indissoluble presence of tradition combined with culture and nature throughout Sicily has transformed the legend of wine into something of a sacred rite and it is with this vision that Gancia has once more deepened its roots further into the warm, fertile soil of Sicily with the Capocroce project, located in the sunny Trapani neighbourhood of Contrada Castellazzo.
